Phytic acid () Phytic acid (known as inositol hexakisphosphate (IP6), inositol polyphosphate, or phytate when in salt form), a saturated cyclic acid, is the principal storage form of phosphorus in many plant tissues, especially bran and seeds. Phytic acid can be found in most grains, seeds and beans. Rich sources of phytic acid are wheat bran and flaxseed (3 % phytic acid). Phytic acid has been considered as an anti-nutritional component in cereals, seeds and beans. Research has traditionally focused on its structure that gives it the ability to bind minerals, proteins and starch, and the resulting lower absorption of these elements. However, recent research have shown that phytic acid has many health benefits. Phytic acid has antioxidant, anticancer, hypocholesterolemic and hypolipidemic effects.
